Main Meals
Pizza - Coconut Crust
3 eggs
1 garlic, minced
1 cup coconut milk
1/2 cup coconut flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp Italian seasoning
Preheat oven to 375 degrees.
Beat all ingredient together.
Spread on Parchment paper lined Pizza pan.
Bake 12-20 minutes.
Put on desired sauce, topping and cheese.
Bake 5-10 minutes more
Topping suggestions: Alfredo sauce with chicken and bacon.
Sausage and onion. Lots of pepperoni.

Chili
3 lbs ground beef
2 large green peppers, diced
5 celery stalks, diced
1 small onion, diced
 4-6 garlic cloves, minced
1/2 cup hot sauce
2 - 28 oz canned diced tomatoes
1 Tbs cumin
1 Tbs paprika
1 Tbs chili powder
1 tsp black pepper
1 tsp red pepper
Ground beef. Drain grease. Add all other ingredients and let simmer on medium for 30 minutes.
Great with cauli "Rice", topped with eggs, over zucchini noodles or dreamfield noodles.

Bacon covered Meat Muffins
16 oz. Bacon
2 cups ground beef or turkey
1 1/2 cup mozzerella cheese
1/2 cup cauli "rice"
Bake bacon on baking sheet under broiler in oven. Turn over halfway through cooking.
Preheat oven to 350 degrees.
Line a muffin pan with bacon on sides and bottom. Mix meat, cheese and rice together. Stuff each muffin section with meat mixture.
Bake for 20 minutes. Sprinkle with more cheese on top when out of the oven.

Hot Wings
1/4 cup butter
1/2 cup hot sauce
1 Tbs paprika
1 Tbs chili
1/4 to 1 tsp red pepper
Preheat oven to 350 degrees.
Place chicken wings on baking sheet. Cook in oven for 30 minutes turning once.
While chicken wings are cooking, combine the rest of ingredients in saucepan and cook until reduced down slightly. Add cooked chicken wing to sauce and coat each one in sauce. Place on serving tray.

Side Dishes

Cauli "Rice"
1 Cauliflower head, cut up into chunks
2 cups water
Place raw Cauliflower chunks into food processor. Process until size of rice.
Add Cauliflower rice in a stockpot with water. Bring to boil. Cook until tender and almost all water has evaporated. Watch carefully, so it doesn't run out of water and scorch bottom of rice.

Cheesy Cauli Grits
1 Cauliflower head, cut up into chunks
4 cups water
2 Tbl Butter
1/4 cup heavy cream
Salt
Pepper
1/2 cup Cheddar Cheese
Place the Cauliflower in a stockpot with water and bring to a boil.
Cook until tender. Drain and place in food processor. Process until all pieces are smooth.
Place back into stockpot and add butter, cream and salt and pepper to taste. Mix well. Top with Cheddar Cheese.


Breads

Hamburger Buns
1 egg
1 Tbs Coconut Flour
1 Tbs Almond Flour
1 Tbs Coconut Oil, melted
1/4 tsp baking powder
Pinch Salt
Optional: 1 tsp nutritional yeast, 1/4 tsp poppy seeds, chia seeds, sesame seeds
Preheat oven 350 degrees.
Add all ingredients in a bowl and mix together. Split mixture into 2 portions. Spoon onto oiled parchment paper. Spread into 3 inch circle. Sprinkle seeds on one circle.
Bake 10 minutes. Use each circle as top and bottom of bun.

Misc.
Coconut EVOO Mayonaise
1 whole egg
2 egg yolks
1 tsp dijon mustard
2 tbs lemon juice
1/2 tsp salt
1/4 tsp white pepper
1/2 cup Virgin coconut oil, melted
1/2 cup Virgin Olive Oil
Mix all ingredients, except oils in a blender.
Add oils in a little stream while blender is running.
Mixture should be thick and creamy.
Store in refrigerator for about a week.
